Let's say that you are in the following situation:
1. you use the bulk updater to extract all the documents of your class
2. you realize after the extract that you are missing entries in your category
Would you rather?
3.a. Update the category in your library with the new entries and update your spreadsheet (with the new values without the drop down) for a quick sync
or
3.b. Update the category in your library with the new entries, perform another bulk updater spreadsheet extract, and update the spreadsheet with the new values using the drop down?

I would vote for 3b to avoid extra categories being created because of typo's
